Crockpot Macaroni & Cheese with Ham

Ingredients
8 oz. elbow macaroni, cooked without salt2 c. shredded Monterey Jack cheese2 c. shredded sharp cheddar cheese1 can (12 oz.) nonfat evaporated milk1-1/2 c. milk (I used 1% for the nutritional info)2 eggs, lightly beaten1 c. diced ham1/4 c. onion, chopped1/4 tsp. pepper
Directions
Spray a 3-4 quart crockpot with cooking spray. Combine cooked pasta, 3 cups of cheese, milk, eggs, ham, onion and pepper together in the crockpot; mix well. Sprinkle the remaining 1 cup of cheese over top of the pasta mixture. Cover and cook on low for 3-4 hours (cooking for closer to 4 hours will give you a bit of a crispy crust, almost as good as baked mac & cheese!).
