Carrot & Mint Salad with Coconut and Currants

Ingredients
2 tablespoons lemon juice1 tablespoon extra-virgin olive oil2 tablespoons fresh mint, chopped1 tablespoon fresh chives, chopped¼ cup sweetened shredded coconut (I add more to taste)¼ cup dried currants (I add more to taste)1 pound carrots, peeled & shreddedSalt
Directions
For dressing, whisk together the lemon juice, olive oil, mint, and chives. Season with salt.
Combine the carrots, dried currants, and coconut, tossing until mixed.
Pour the dressing mixture over the salad and toss.
