Slow Carb Pork w/ garlic black bean sauce

Ingredients
~1.5 lb. pork, cubed1 can of black beans, drained and rinsed1 medium onion, chopped1/4 c. chicken stock1 tsp. minced garlic1 tsp. minced ginger1 tsp. cumin1 tsp. kosher salt1 tsp. black pepper1/2 tsp. chile powder1/4 tsp. cayenne~2 tsp. lime juice
Directions
In a large skillet, heat peanut or macadamia nut oil and brown the pork in batches, then remove to a bowl.

Sautee the onions, garlic, and ginger until fragrant, then return the pork to the skillet, add salt and pepper, and mix well. Add the chicken stock to help de-glaze the pan, then mix in the black beans and remaining spices. Add the lime juice to add a bit of acid, cover, and reduce heat to medium-low for 10 minutes.

    This was SO good! I did not use any meat but I used everything else... except the lime juice. The lime juice would have made it even better though! I added corn for some sweetness, but it did not need any :D We put this over rice :D So yummy!! Oh, and I also used coconut oil.. that's all we had :D - 6/1/12
