Double Chocolate Muffins

Ingredients
1 cup splenda2 eggs1 teaspoon vanilla extract1/2 cup ( 1 stick) butter or margarine, melted3/4 cup all- purpose flour1/4 cup unsweetened cocoa powder1/8 teaspoon salt2 ounce (1/2 of a 4-ounce bar) milk chocolateConfectioners' sugar (optional)
Directions
1. Preheat oven to 375. Line a 12- cup muffin pan with paper liners.

2. Combine the splenda,eggs and vanilla extract in a large bowl. Beat with an electric mixer set on medium speed until creamy, 1-2 minutes. Beat in the melted butter until blended, about 1 minute longer.

3. Combine the flour, cocoa, baking powder and salt in a small bowl. Stir in a small bowl. Stir to blend. Add the flour mixture to the splenda mixture. Beat with the mixer on low speed until well mixed, about 1 minute. Coarsely chop the semisweet and milk chocolate. Stir the chopped chocolate into the batter.

4. Divide the batter evenly among the prepared muffin cups. Bake the muffins until set and the tops are slightly cracked, 12-14 minutes. Remove from pan and let stand on a wire rack to cool slightly. Dust with confectioners' sugar before serving, if desired.
