Pumpkin soup

Ingredients
7 T flour6 T Butter2 onions chopped2-3 stalks of celery chopped2 carrots sliced2 cups cooked pumpkin or whole can10-11 cups chicken broth1 t salt1 t white pepper to taste
Directions
Melt butter. Saute onions. Add celery, and carrots. Saute 2 min. Remove from stove add flour and stir until smooth. Add pumpkin and broth and seasoning. Return to stove and boil. Cover and simmer for 30 min.
Remove and puree...best to allow to cool first.
May be served hot or cold.
Freezes well, but may need to reblend.
