Apple Pecan Pie

Apples fresh, cooked, 2 cup slicesAgave Nectar, 2 tbsp.Oat Bran, (uncooked) .75 cupSmart Balance, 3 tbsp.Pecans, .5 cup, groundPecans, .25 cupCinnamon, 2 tsp.Lemon Juice, 1 tbsp.
Preheat oven to 375 degrees.
Place cooked apples, agave nectar and cinnamon in a bowl and drizzle with fresh lemon juice. Mix together and set aside with cover.
In a seperate bowl, add oat bran, smart balance, ground pecans and mix into a ball.
In a large pie plate or tin, place oat pecan ball in the middle and spread out to the edges of the pie pan as evenly as you can. Place it in pre-heated oven and cook for 12-15 minutes. Take out and set aside and let cool.
Fill pie crust with apple mixture and smooth out. Place pecan halves creatively on top of pie. Place pie in oven for about 25 minutes.
Take pie out and let cool. It is best if served the next day, so you may want to keep in refrigerator over night. It get's better each day it sits.
You can serve this with a spoon of low fat creamy cottage cheese on top of a hot piece of this pie and that will make for a full meal especially during the holidays. Enjoy!
Tip: If you choose to have it with cottage cheese, you can dust the top of the cottage cheese with nutmeg as it pulls all the flavors in even better.
