Wannabe Waldorf Salad

Ingredients
2 cups iceberg lettuce1/2 medium apple, chopped1/2 cucumber, chopped1 leftover chicken breast, chopped3 tbsp Kraft Fat Free French dressing
Directions
Here's a great way to use up any extra chicken from the night before. Chop the 1/2 apple, 1/2 cucumber & the chicken breast into larger pieces. Mix together with the lettuce. Add dressing and toss. Great simple salad with a sweet kick.

The traditional Waldorf salad calls for raisins and nuts, however, I feel that this simpler version is better for you and gets the job done.

Another suggestion is to cook several chicken breasts at once - say on the weekend - then chop and store to use throughout the week. Then you can have a quick and easy gourmet salad everyday!

Makes 1 good-sized serving. Perfect to toss in a container and take to work for lunch. Your co-workers will be jealous!
