Ingredients
mung bean pancake mix 2 TBS, 1 serving Egg, fresh, 1 large Scallions, chopped 1 medium (4-1/8" long) Cilantro, fresh chopped, 1 tbsp fried wonton 3 - 3.5 inch, Black Bean Sauce, 1/2 tbsp Hoisin sauce, 1/4 tbsp siracha chili sauce, 1/4 tsp
Directions
Place 1/4-1/2 cup canola or peanut oil (included in the fat content for fried wontons) in a pan and cook wontons for about 1 min per side. Drain on paper towel.

Add water to pancake mix to make a thin crepe batter. Place on hot griddle and spread into a thin giant pancake.
Crack egg on pancake, break yolk and spread out as thin as possible for Cook for appox 1-2 min. Flip. Spread sauces and sprinkle scallion and cilantro. Place fried wontons near one edge. Fold pancake in half then in half again.

I buy the pancake mix (mung bean) at the local Asian market. This recipes makes approx 13 inch pancake. The one in the video is much larger.
