Curried Egg Salad Sandwich

Ingredients
2 Hard boiled eggsReduced fat sour cream Zucchini TomatoesOlive oil Curry powderOnionsOne bun sandwich breadRomaine lettuce
Directions
Chop 1/2 the tomato, the zucchini and red onion
Add curry powder and a touch of olive oil (to prevent drying) to the mixture
Roast veggie mixture for 10 minutes at 375F.
Let cool down to desired temperature
Add hard boiled eggs (chopped roughly) and reduced fat sour cream
Use tomato and lettuce slices as sandwich garnish


Serving Size: Makes enough egg salad for 2 sandwiches
