turkey and veggie meatloaf

Ingredients
2 lbs ground turkey, 93% lean20 black olives, diced1/2 red onion, medium, diced20 crackers, saltines unsalted tops3/4 C bell pepper, diced1 large egg2 T ketchup1 T mustard, yellow5 ounces cheddar cheese, finely shredded
Directions
Combine all but the cheese in a large mixing bowl. Divide into 2 separate bread loaf pans and bake at 350 for 45-50 minutes; remove - can drain water if desired - add cheese and melt with an additional 10 minutes. Remove and cool.

Serving Size: Makes 16 slices approx 3/4 inch thick, good topped with warm tomato sauce
