Shrimp Salad(crunchy southern style)

Ingredients
2 lbs cooked salad shrimp( thawed)1 small vidalis onion- diced fine4 stalks celery- diced fine2 Tbls lime juice11 Tbls Light Mayo.33 cup fage zero fat yogurt1 tsp salt 1 tsp pepper 1 Tbls spicy dijon mustard( smooth style) 2 Tbls minced parsley
Directions
Mix everything except shrimp in a bowl- add shrimp and toss to mix.

Serve over lettuce with tomato, peach and honeydew melon cubes as garnish( not counted for in calories)

    You can also add the herb of your choice- 1/4 cup basil, mint, cilantro or parsley helps boost flavor- and will allow you to make the salad "go" with other side dishes. Mint works well with middle eastern foods like felafel, parsley and basil work with italian, cilantro goes great with Thai& mexican
