Creamy Corn & Black Bean Mess

Ingredients
1 can corn, rinsed1 can black beans, rinsed8 oz. chunky or garden style salsa1 package Neufchatel cream cheese (8 oz)2 poblano peppers, roasted and chopped1 bell pepper, chopped1/3 c. chopped red onionsalt, pepper, and spices to taste1 tsp. olive oil
Directions
Heat olive oil over medium to medium-high heat in a large skillet or saucepan. Sautee bell pepper and onion.

Add corn, black beans, roasted peppers, salsa, cream cheese, and spices. Heat over medium heat, stirring often, until heated through.

Serve over brown rice (not included in nutritional info). Garnish with fresh avocado if desired.
