Shortbread

Ingredients
4 cups flour1/2 teaspoon salt1 cup packed light brown sugar2 cups (one pound) unsalted butter1 teaspoon vanilla
Directions
Whip butter
Add sugar to butter and whip til fluffy
Add 1 cup flour and the salt
Add remaining flour one cup at a time
*Be careful not to overbeat when adding flour

Lightly flour a piece of parchment
Turn dough out on parchment
Roll dough into rectangle
Place dough on parchment into a large cookie sheet
Score into squares ( redfine squares after cooking while still warm)
Prick all over with a fork
Bake 25-30 minutes (until lightly browned)
