Lori's Low Carb Green Chile Stew

93% Lean Ground Beef, 16 oz Canned Tomatoes, 1 canTomato Sauce, .5 cupBeef broth 3 cupCelery, 2 cup, dicedOnions, 1/2 cup, choppedGarlic, 3 cloves - mincedGreen Chiles (Whole) 8 oz (I use about 5 fire roasted chiles but canned chiles will work as well)You can add potatoes and other vegetables if you like. I am eating low carb, so I refrain from the potatoes and too many carrots.Recipe is rather high in sodium, so you can used low sodium broth, tomatoes and tomato sauce.
Brown ground beef, onions & garlic in a Large Pan over medium heat, until ground beef cooked through.
Add chiles and stir for about a minute, to let the chile flavor come out.
Add remaining ingrediants and cook until vegetables are cooked to desired doneness (about 40-60 minutes).
You can add lots of other vegetables & potatoes if you like. Sometimes I add green beans or carrots.
*Recipe is very high in sodium, so you can substitue low sodium broth, tomatoes and tomato sauce to lower it considerably.
