Ingredients
2 cups sugar1 3/4 cup water1 tsp vanilla 1 box mochiko1 tsp baking powder1 can coconut milkfood coloring- optional, not included in nutritional info.potato or cornstarch used for cutting- not included in nutritional info.
Directions
combine mochiko, sugar, and baking powder. in a separate bowl blend coconut milk, water, and vanilla. gradually incorporate wet ingredients into dry ingredients. mix well. remove half the mixture and add 2-3 drops food coloring. pour colored mixture into a greased 9x13'' pan. cover tightly with foil and bake 40 minutes at 350. pour remaining mixture over colored layer and bake an additional 40 minutes or until set. let cool completely (prefereably overnight) before cutting into bite-sized strips with a plastic knife. dusting with corn or potato starch will make it easier to cut, and help avoid the pieces sticking while storing.

*for one color chi chi dango, bake for 90 minutes at 350.
