Avocado Black Bean Salsa

Ingredients
1 (15-ounce) can black beans, drained and rinsed1 cup frozen whole-kernel corn, thawed, or fresh corn kernels (1 ear)1/4 cup packed fresh cilantro, chopped2 med-large Roma tomatoes, seeded and diced1/4 cup red onion, diced small3 tablespoons fresh lime juice2 tablespoons avocado oil or light olive oil1 teaspoon ground cumin1/2 teaspoon salt2 avocados, diced* Optional 1 Teaspoon of minced Serrano Chili Pepper
Directions
Combine first 5 ingredients. In a separate bowl, mix lime juice, EVOO, cumin and salt until well blended. Pour over other ingredients. Dice and fold in avocados just before serving.
