Magic Vegetables/ Chicken and Dumplings

Ingredients
3 potatoes 1 large oniontwo carrots1 bag frozen mixed vegetables 4 bouillon cubes (any flavour)Dumplings:1 1/2 cup flour2 tsp baking powder1/4 tsp salt (optional)3 tsp butter or margarine1/2 cup skim milk
Directions
Peel and cut potatoes and carrots into bite sized chunks. Slice onion finely, and put in large pot.

Make bouillon with hot water-- you can use any flavour of bouillon cubes, chicken, vegetable or beef all give a nice flavour. Pour over vegetables in pot and simmer.

Add the bag of frozen vegetables and continue to simmer until potatoes are soft. If adding leftover meat, add it now

Meanwhile, mix flour, baking powder and salt in a bowl. Add herbs here if you like, like oregano or basil (to taste). Cut in butter or margarine until the mixture resembles dried peas. With a fork, toss in the milk until a dough forms.

Drop the dough by spoonfuls on top of the bubbling stew, spaced around the pot. Cover tightly, reduce to medium-medium low heat, and let simmer for 15-20 minutes. DO NOT PEEK! This is where the magic happens.

When done, carefully lift lid and behold your steamed dumplings and yummy vegetables :)
