Ingredients
3 egg whites1 whole egg3/4 ripe fresh tomato, chopped1 slice of raw red onion, chopped1/4 cup low fat cheddar cheesesalt & pepper
Directions
mix everything except cheese.
Heat not stick frying pan over medium heat
poor in egg mixture
top with grated cheese
reduce heat and cover
cook until top starts to set
serve
