Edamame, celery stir fry

Ingredients
4 Stalks Celery, Sliced1 Carrot, Sliced1 Red Pepper, cut into strips1 Tbsp Olive oil1 Tbsp Rice Wine Vinegar1 Tbsp Low Sodium Soy Sauce2 c frozen edamame1 Tbsp toasted sesame seeds
Directions
In large non-stick skillet, add oil over medium heat. When hot, add celery, carrot, and pepper and cook for about 5 minutes, or until pepper begins to get soft. Add Edamame, vinegar and soy sauce and stir to combine. Cover and cook for another 5 minutes, or until edamame is no longer cold. Sprinkle with sesame seeds directly before serving.
