Strawberry Fuit Spread

12 oz frozen unsweetened strawberries, or 3 cups fresh1 Tbl frozen apple juice concentrate1 tsp pure vanilla extract1 tsp ground cinnamon
Place the berries in the bowl of a food processor and pulse until roughly chopped but not pureed. Transfer to a 2 quart saucepan. Add the juice concentrate and bring to a boil over medium high heat. When the mixture boils, reduce the heat to low. Simmer for about 3 minutes, (slightly longer if using frozen berries), stirring occasionally, or until the juices have reduced slightly and the mixture has thickened.
Remove from the heat and cool. Stir in the vanilla and cinnamon. Will keep for 2 weeks if refrigerated.
