Mom's Best Meatloaf Ever

Ingredients
2 eggs2/3 cup milk2 tsp salt/pepper3 slices whole wheat bread crumbled (four frozen crusts)1 med. diced onion1/2 cup finely grated carrot1 cup grated part skim mozza cheese1 small package ground lean beef (0.367 kg)Top loaf with tomatoe paste or sauce (optional and not in calorie count)
Directions
Beat eggs, add milk and seasoning. Add bread to milk mixture and let sit while you chop onions, grate carrots and cheese. Mix all together with ground beef. I usually microwave a small portion to test flavor and seasoning. Press mixture into a loaf pan and bake for an hour at 350. I use a shallow glass pan so the meatfloaf is only 1-1/2" high because we like it browned on the bottom and we also like to cook the loaf with a 1/4 cup of tom. sauce on top. Another way to cook it is in a regular loaf pan and slice the loaf when done into 1" slabs and then sear on a hot pan to get a caramelized crust.
