2/3 cup onion, diced1/8 tsp ground ginger2 Tbsp minced garlic2 large carrots, diced2 medium yukon potatoes, peeled and diced1 small zucchini, sliced 1" thick1 can (15 oz) garbanzo beans, rinsed + drained1 lb boneless, skinless chicken breasts1/2 tsp cumin1/2 tsp turmeric1/2 tsp salt1/2 tsp black pepper1/4 tsp cinnamon1/4 tsp cayenne pepper1 can (14 1/2 oz) diced tomatoes2 tsp dried parsley1 Tbsp cilantro, chopped
Combine first eight ingredients in slow cooker. Combine spices in small bowl and sprinkle over ingredients in slow cooker. Add chopped tomatoes.
Cover and cook on LOW 8 to 10 hours or on HIGH 4 to 5 hours. Stir in parsley and cilantro before serving.
