Ingredients
3 large zucchini2 large yellow sqaush1 container ricotta cheese1 bag soy mozzarella1 bag soy parmesian1/4 cup eggbeaters3 cups homemade pasta sauce
Directions
roast squash for 45 minutes in the oven, mix ricotta with half bag of mozz, and half bag of parm, and the egg.
then make just like you would a regular lasagna...one layer zucchini, a layer of ricotta mixture,layer of sauce, layer of yellow squash, ricotta mixture, ;ayer of sauce, layer of zuchinni sauce and cheese
