Lunchbox Sushi

Ingredients
4 slices whole-wheat bread 1 T reduced-fat mayonnaise 1/2 avocado, mashed 1/2 cup tuna packed in water, drained 1 cucumber, cut into strips
Directions
Remove crusts and, with a rolling pin, gently roll bread to flatten slightly. Along the middle of each slice spread a little mayonnaise and avocado. Top with Place long, thin strips of cucumber on top and roll tightly. Cut in thirds, turn up and place into lunchbox for later.

Optional: Use a variety of breads to keep them interesting.

Other yummy fillings:

• Cream cheese, salmon and thin slices of cucumber
• Ham, cheese and finely shredded lettuce
• Cottage cheese, thinly sliced carrot and raisins
• Peanut butter and thinly sliced carrot
• Egg and lettuce
• Tuna, mayonnaise and finely shredded lettuce
• Curried egg
• Avocado, shredded chicken and cheese

For a sweeter variety do the same as above but use fruit or raisin loaf slices and fill with the following;

• Strawberry jam and cream cheese
• Peanut butter and honey
• Mashed banana
• Peanut butter and mashed banana
• Nutella and grated apple
• Pineapple
• Peanut butter and strawberry jam
• Cottage cheese, jam and raisins
