Orange-Baked Chicken Drumsticks

Orange zest, 1 tbsp (optional)Orange juice, 1/2 cupHoney, 1/3 cupHot pepper flakes, 1/2 tbsp (if you want less heat, use roasted red pepper flakes instead, or omit)Salt, 1/4 tspBlack pepper, 1 pinchChicken drumsticks, 8, skin removed (if your drumsticks aren't skinless, just grab the skin with paper towel and remove it yourself)
Preheat oven to 400F.
Combine orange zest & juice, honey, pepper flakes, salt and pepper. (If you have time, marinate the chicken in sauce for an hour in the fridge, but it won't suffer if you don't).
Arrange chicken in non-stick or sprayed baking dish. Pour marinade over top, turn to coat.
Place chicken in oven for 25-30 minutes, basting occasionally and turning once, til chicken is golden and juices run clear when pierced. Sauce should thicken slightly.
Serving Size: Makes 4 (2-drumstick) servings
