1 cup Milk, 1% 1 cup Carrots, raw chopped1/4 cup Onions, raw, chopped 1/3 cup Smart Balance Light Buttery Spread8 oz Chicken Breast, no skin1/4 cupFlour, whole grain32 oz Swanson Chicken Broth 99% Fat Free1 box Rice-a-Roni Long Grain & Wild Rice mix (2 servings/box)
cut chicken, saute in kettle with spray oil.
Melt butter in large kettle.
Add chopped onion and saute over med. heat until translucent.
Add flour to make a roux (thick paste) and simmer for just a minute.
Slowly stir in chicken broth.
Add rice mix, seasoning packet & carrots.
Simmer 25 min. or until carrot & rice are ooked.
Stir in milk to taste...heat through and enjoy.
