Open-Faced Italian Tuna Melt

2 small cans Tuna in Water - Drained1/4 c chopped Green Olives2 Tbsp Olive Oil Mayo2 Tbsp Pesto SauceJuice from 1 Whole Lemon - Squeezed1 small red onion - DicedFour slices Bread of your choiceSix slices Cheese of your choiceLarge tomato sliced - 4 thick slices
Mix Tuna, Olives, Mayo, Pesto, Onion and lemon Juice in a bowl. Place cheese on bread, spread 1/4 of tuna mixture on cheese, place large tomato on top, with 1/2 slice of cheese on top. (You can top with another whole slice of cheese if wanted or use a second slice of bread for a pick-up sandwich, but this will change the listed nutritional values). Brown bottom of bread with cooking spray or small amount of olive oil in a pan. Put in 350 oven until cheese is melted. Eat w/salad, carrot sticks or side of your choice.
