Introduction

This is one of my favorite dishes to make and I have enjoyed making it even healthier by substituting some ingredients for flavor packed healthier ones. Number of Servings: 4

Ingredients

    8 oz Brown rice pasta
    10 Cooked Jumbo shrimp (fresh or frozen)
    2-3 Shallots, sliced thin
    1 Med Red bell pepper, sliced & cut into 1" pieces
    3 Garlic cloves, minced
    1 Tbsp extra virgin olive oil
    4 C Arugula, washed & patted dry
    Black pepper to taste

Directions

Cook pasta according to package directions. While pasta is cooking; saute the red peppers, shallots, shrimp, and garlic in the olive oil over medium heat. Line a colander with arugula and drain the cooked pasta over to wilt. Combine pasta, sauteed mix, and arugula back into pasta pot and toss. Divide onto 4 plates and lightly garnish with fresh grated Parmesan or Feta and a dash of black pepper.

    where can I find the Tinkyada brown rice pasta, not sure they have it in my area, is there something else I can use??? - 11/6/09

    I am not sure were you are but if there is a Trader Joe's near you They have a great Brown Rice Pasta that is a really good price too. Other than that I have been able to find any kind of rice pasta in a stores "Gluten Free" section. If you can, any pasta works and angel hair is really nice too

    I was worried this was giong to be bland, so I added some lemon juice and white cooking wine and it was excellent - the arugula really makes it flavorful! - 4/15/10

    This sounds very good and a little different from most of the reiepes on SP. I am going to make it this weekend. I wish I could try before the voting deadline, but, I am 99% sure this is going to be wonderful. - 11/10/09
