Rumbamel's Queso Cornbread

Ingredients
-2 packages, 6.5 oz each, Betty Crocker cornbread and muffin mix-2 large eggs-2/3C skim milk (fat free)-4 oz 1/3 less fat cream cheese, room temp. or softened-4 T Monterey Jack queso cheese sauce like Schnuck's brand (white creamy cheese dip)
Directions
--In a med. sized bowl cream the milk and room temp. cream cheese together with the queso dip until smooth. Add each egg one at a time mixing well after each. Mix in the cornbread/muffin mix just until moist. Pour into a lightly sprayed 9 x 13 casserole dish and cook at 400 degrees for about 15-18 minutes or until a knife in the center comes out clean.

--Makes 18 servings.
