Wild Rice Pancakes

.25 cup fat free egg substitue1 tbsp all purpose flour1 tbsp skim milk.25 tsp baking powder.125 tsp dried thyme,125 ground blac kpepper1 cup cooked wild rice5 tbsp minced onions2 tbsp chopped fresh parsley

In a medium bowl, whisk together the egg subnstitue, flour, milk, baking powder, thyme and pepper. Stir in the wild rice, onions, and parsley.
COat a large no-stick frying pan with no stick spray and warm over medium heat for 2 minutes. Working the batches, drop tablespoons of the mixture onto the pan and press down to flatten. Cook for 1 to 2 minutes per side, or until firm andlightly brown.
