Rumbamel's Whole Wheat Low Fat Banana Nut Muffins

-1 C white flour (4.5 oz)-1 c whole wheat flour (4.5 oz)-1/4 t salt-2 t baking powder-2 t Fiber-Sure(Now Metamucil, Clear and Natural)-1 1/2 c mashed ripe bananas (3-4 med.)-1/2 c unsweetened applesauce-1/8 c (2T) unsalted butter, softened-2 large eggs-2 T granulated sugar -3/4 c (95g) chopped walnuts (I use Diamond brand)
--Sift the flours, baking powder, salt and Fiber-sure in a large bowl.
--In another med/large bowl, cream the softened butter and then add the sugar and mix/beat again. Add the eggs one at a time, mixing well after each. Stir in the bananas and applesauce.
--Add the wet ingredients to the dry ones and mix well. Fold in the nuts.
--Put in lightly sprayed mini muffin tins by level tablespoons or using a #50 scooper and bake at 325 degrees for about 35 minutes or until and knife in the middle comes out clean.
-Makes 48 mini muffins which is 24 servings of 2 muffins each.
