Lime and Ginger Summer Delight

Ingredients
• 1 can of frozen limeade concentrate (12 oz)• ½ cup milk • 2 packs (4 servings each) Instant vanilla pudding mix• 1 tub Cool Whip (8 oz) Extra-Creamy, if available• ½ box Nabisco Ginger Snaps (or other brand – not soft)
Directions
Line a 4x8 glass loaf pan with Cling Film (with spare over the edges to wrap completely).

Combine milk with pudding mix, then slowly add limeade, trying to minimize lumps, finally whipping in the Cool Whip.

Pour about half the mixture into the pan. Then place cookies vertically in a length wise pattern in the mixture, as close together as possible without touching each other, nor the bottom or sides of the pan. Pour the remainder of the mixture slowly over the cookies, making sure that none of the cookies is visible from the outside. Quickly smooth over the top using a wet knife and freeze immediately for at least 4 hours, ideally overnight or longer.

To serve, remove from freezer and the loaf pan, carefully remove the cling film, place in serving dish and serve in 1"x2" slices immediately.
