Peanut Butter and Jelly Muffins

2 cups whole wheat flour1 tsp. Baking powder1/2 tsp. Baking soda1/3 cup sugar1/2 tsp salt1 cup applesauce2/3 cup peanut butter2 Tbsp. Honey1 tsp. Vanilla1 tsp. Vinegar1 cup milk (or up to 1/2 cup more if necessary)1/2 cup jam or jelly of your choice
Heat oven to 350 and prepare a muffin tin. Mix dry ingredients in large bowl. Mix wet ingredients in a smaller bowl (I mixed in only 1 cup of milk at this time). Mix the wet ingredients into the dry ingredients. Add more milk if the batter seems too thick. Fill muffin cups 1/2 full, spoon 1/2 teaspoon of jelly on top of batter. Add another tablespoon or so of batter covering the jelly so that the muffin cup is about 3/4 full. Bake at 350 degrees for 15-20 minutes. I baked mine or 17 minutes and they were perfect. I got 21 muffins from this recipe.
