Mustard-Roasted Potatoes

Ingredients
Non stick vegetable oil spray1/2 cup whole grain Dijon mustard2 Tbs. of melted butter2 Tbs. lemn juice3 garlic cloves, minced1 Tbs. dried oregano1 tsp. lemon peel grated finely1 tsp. kosher salt3 pounds 1 to 1 1/2 inch unpeeled potatoes cut into 3/4 inch wedges
Directions
Preheat over to 425.

Spray two rimmed baking sheets with vegetable oil spray. Put rack in oven in top third and lower third of oven.

Widk mustard, olive oil, butter, lemon juice, garlic, oregano, lemon peel and salt in a large bowl to blend. Add potatoes; sprinkle generously with freshly ground pepper and toss to coat. Divide potatoes between prepared baking sheets, leaving any excess mustard mixture behind in the bowl. Spread ptatoes in single layer. Roast potatoes 20 minutes. Reverse baking sheets and orast until crusty outsdie and tender inside, turning occasionally. About 25 minutes longer.

DO AHEAD: can be made 2 hours ahead. Let stand on baking sheets at room temperature. Rewarm in 425 oven 10 minutes.
