Portuguese White Bean Soup

Ingredients
1.5 c diced onion1.5 c diced celery5 cl garlic, minced1 T olive oil2 c water30 oz veg stock1 sweet red bell pepper diced1 sweet yellow pepper diced1 t ground fennel seed1 med potato, peeled and diced2 T lemon juice2 15.5 oz can cannellini beans drained and rinsed.Pepper to taste
Directions
In large saucepan, saute celery, onion, and garlic in oil until very soft but not brown. Remove from heat and blend with 1 c water. Process until smooth. Return to saucepan. Add the remaining water, broth, peppers, fennel, potato and lemon juice. Cover, bring to boil and reduce heat to simmer. Cook 15-20 min until potatoes are tender. Stir in beans and pepper. Cook over med heat until piping hot.
