Mom's Broccoli Casserole

2-3 boxes of frozen broccoli cuts, cooked1/4 cup copped celery1/4 cup chopped green pepper1/2 cup chopped onion1 can cream of mushroom soup (98% fat free)1 can cream of chicken soup (98% fat free)1 8 oz. jar cheese whiz1 cup minute rice1/2 bag of pepperidge farm stuffing mix (blue bag) divided in two, uncooked
Melt soups and cheese whiz together. Cook rice per package directions. Stir both together with the remaining ingredients, using one half of the stuffing mix, until mixed well. Top with the remaining stuffing. Cover with aluminum foil and bake 30 minutes at 350. Remove foil and cook 15 more minutes. Can be mixed the day before, refrigerated, and baked on the day of the event.
