Mashed Parsnips and Carrots

Ingredients
2 Parsnips peeled and chopped (1" cubes)6 Carrots peeled and chopped (1" cubes)1 clove of minced garlic2 tbsp of butter or margerine1/4 cup of nonfat milk1 tsp salt to taste1 tsp ground black pepper to taste
Directions
Boil parsnips and carrots in water until tender (15-20 minutes).
Drain parsnips and carrots and mash them together (a potato ricer works well for this).
Mix in minced garlic, butter, milk, salt, and pepper.
Place in a bowl and serve warm.

    Have not tried it yet but this based off of a version I have cooked in the past so I know it's good and nutricious - 4/20/13
