Mini zucchini pizzas (South Beach P2 friendly)

Ingredients
2 zucchini squash (green)1/2 C. Pizza Sauce (make sure there's no sugar in it for South Beach friendly version)1/2 C. 2% shredded cheddar cheeseabout 20 turkey pepperoni slices (however many zucchini slices you end up with)
Directions
Slice the zucchini into about 1/4" slices. Spoon the pizza sauce over the slices. Add a pepperoni to each one. Scatter cheese on top. Bake at 300 degrees for 15-20 minutes, until cheese is melted.

Serving Size: 1 serving is appx 20 "pizzas"
