2/3 c. whole wheat flour1/3 c. unbleached white flour1/ tsp. baking powder1/8 tsp. baking soda1/2 tsp. salt1/3 c. no trans fat margarine w/Omega-3's1/2 c. splenda brown sugar blend, packed1 large egg1 T. vanilla extract1/2 c. dark chocolate chips1/2 c. walnuts
1. Preheat oven to 350 degrees. Coat a 9-in nonstick cake pan with cooking spray
2. Mix flours, baking powder, baking soda, & salt together. Whisk together well, set aside.
3. Melt the margarine in a small, nonstick saucepan over medium heat. Stir in brown sugar & continue to cook for about a minute. Remove from heat & let cool for a few minutes.
4. Add brown sugar mixture to a large mixing bowl. Add in the egg & vanilla & beat on medium-low speed until well blended. On low speed, beat in the flour mixture, a little at a time, just until blended. Stir in the chocolate chips & nuts if desired & pour into pan. (I sprinkled dk-dk chocolate powder over the top)
5. Bake for 20-25 min. or until brownies are done to your liking (don't overbake if you like them on the chewy side). Let cool about 10 min, then cut into 12 squares.
Serving Size: makes 12 -2" pieces
