Shrimp and Vegetables with Peanut Sauce

2 green onions, chopped2 cloves garlic, minced6 ounces shrimp1 cup whole wheat pasta1/4 cup Adams crunchy peanut butter3 tablespoons seasoned rice vinegar3 tablespoons low sodium soy sauce1 teaspoon cayenne pepper2 teaspoons sesame oil1 bunch broccoli, chopped1 red pepper, chopped6 medium mushrooms, sliced
1. Mix shrimp, onions, and garlic together. Set aside.
2. Cook pasta according to directions. When pasta is done, reserve cooking liquid.
3. Mix peanut butter, rice vinegar, soy sauce, and cayenne together.
4. Heat skillet over medium high heat. Add oil to pan. Cook broccoli, red pepper, and mushrooms for two minutes. Add shrimp and cook for another four minutes, or until cooked through. Mix in pasta and peanut sauce. Slowly add reserved cooking liquid until desired consistency is reached.
5. Serve.
