Tuscan Meat Sauce

Ingredients
1 cup olive oil (1/2 c is drained off later)1 c chopped onion1 carrot1/2 stalk celery1/4 c cilantro 500 grams ground veal100 grams ground pork1 750 ml tin of tomatoes, blended1 c water1 c red wine
Directions
Finely chop onion, carrot, celery and cilantro in food processor. Saute in 1/4 c olive oil. Add ground veal and pork and brown for 10 minutes. Add tomatoes, remainder of olive oil, water, and red wine. Let simmer for 2.5 hours. Drain off as much oil as possible (nearly 3/4 cup).
