Introduction

This is a great "healthier" version of lasagna you can do in the crockpot! This is a great "healthier" version of lasagna you can do in the crockpot!
Number of Servings: 8

Ingredients

    - 8 whole wheat lasagna noodles, uncooked.
    - 1-2 lb extra lean ground beef or turkey (I use 2 but I have a big crockpot and like it meaty!)
    - 1 tsp italian seasoning
    - 28oz jar low fat/low sugar spaghetti sauce
    - 1/3 cup water
    - 4oz can sliced mushrooms (rinsed and drained)
    - 15oz fat free ricotta cheese
    - 2 cups shredded skim milk mozzarella cheese

Directions

1) Spray inside of cockpot with no-calorie cooking spray.
2) Cover bottom of crockpot using 4 noodles (break to fit)
3) Brown ground beef in pan. Drain. Stir in Italian seasoning. Spread half of it over noodles in crockpot.
4) Layer 1/2 of sauce, 1/2 of mushrooms, 1/2 of ricotta and 1/2 of mozza over beef. Repeat layers.
5) Cover and cook on low for 5 hours.

Makes 8 small servings or 6 large.

    I tried this recipe this week. I do agree that it makes a TON of food (which is great for leftovers), but I think I will not use two lbs of meat next time, and maybe mix in some italian sausage for more flavor. Also, the cooking time was a bit long. - 6/10/09

    We all loved this recipe. However, it only took 3 1/2 hours on low in my crockpot. I also used soy crumbles instead of hamburger and no one even noticed. I will definitely make this again. - 4/26/10

    Never gave a thought to cooking lasagna in a crockpot and I use mine alot. Turned out real good and we all loved it, will make it again . Thanks for Sharing - 6/7/09

    This was awesome. I am adding it to our families menu rotation :-) I coudn't find w/w lasagna noodles, so just used regular :-( - 11/19/07
