Ingredients
*Garbonzos, 1.5 cups *Brown Rice, medium grain, 1 cup Red Ripe Tomatoes, 2 medium whole (2-3/5" dia) Green Peppers (bell peppers), .4 cup, strips Carrots, raw, 1 small (5-1/2" long) Jalapeno Peppers, 1 pepper Onions, raw, 3 tbsp chopped Garlic, 2 cloves Ginger Root, .25 tsp Eggplant, fresh, 1 cup, cubes Olive Oil, 3 tbsp
Directions
Use cooked garbonzos and rice, stir fry the rest till done, add beans and rice continue cooking till hot
