Minty Lime Avocado Kiwi Salad

2 Large Haas Avocado, diced2 Granny Smith Apples, sliced thin, dime-sized slices1 Large Lime and zest 4 Kiwis, sliced into thin rounds1/2 c Pistachios4 Fresh Mint sprigs2 T Grade B Maple Syrup Garnish: Mint for garnish
1. Chop, squeeze and peel all ingredients.
2. Add to a large bowl.
3. Toss well with spoon.
4. Serve immediately or cover and chill until ready to use.
Avocados will loose their firmness and color overnight.
Garnish with fresh mint leaves.
