Lentil and Turkey Sausage Soup

Ingredients
1/2 Turkey Polska Kielbasa--cut length wise and cut into 1/3 chunks1/2 lb Green Lentils1 Large red onion- diced3 carrots--diced3 stalks celery with leaves--diced2 cloves garlic--pressed1/2 t cumin1t Fresh Thymesalt pepperChicken Stock--1 qtWater- 2cOlive oil
Directions
In a bowl, pour boiling water over lentils and let sit for 15 minutes. Drain and set aside


Saute onion, carrots, celery, garlic in EVOO. Once veggies are soft, add thyme and cumin and cook for a couple more minutes. Then, add liquids and lentils. Cover and bring to a boil. Once soup is boiling, uncover, reduce heat and simmer uncovered for 1 hour. Add kielbasa and 2T red wine vinegar and cook until sausage is warmed through.
