Barley Lentil Soup

1 tbsp vegetable oil1 onion chopped2 cloves garlic, minced1 each large carrot and stalk celery chopped2 tsp dried thyme1 tsp each salt and pepper4 cups vegetable broth1 cup brown or green lentils1/4 cup pot or pearl barley
In a large skillet, heat oil over medium heat; fry onion, garlic, carrot, celery, thyme, salt and peper, stirring occasionallym until vegetables are softened, about 5 minuts. Scrape into slow cooker along with broth, 2 cups water, lentils and barley. Stir to combine.
Cover and cook on low until lentils and barley are tender, about 6 to 7 hours.
