Asian Turkey Lettuce Wraps

Ingredients
1 Tbsp sesame oil1 large onion, chopped1 1/4 lb extra-lean ground turkey (93% lean)1/3 cup Asian duck sauce ( or plum sauce)1 Tbsp. Hoisin sauce1 Tbsp. low sodium soy sauce, plus additional soy sauce for dipping1 medium cucumber, peeled, seeded, chopped 8 oz can water chesnuts, coarsely chopped1/3 cup coarselty chopped fresh mint plus 1/3 cup small mint sprigs12 large butter lettuce leaves, washed and towel dried optional Red Pepper Flakes
Directions
Heat oil in heavy large skillet over medium heat. Add onion and saute until beginning to brown, about 3 minutes. Add ground trukey and saute until brown and cooked through, breaking up with back of spoon about 7 minutes. Add duck sauce, hoisin sauce and 1 Tbsp soy sauce stir. (the meat mixture can be made 8 hours ahead , covered and refrigerated and then reheated in microwave or skillet with water to moisten if needed). Stir in cucumber, water chesnuts and chopped mint. Place lettuce leaves on platter, Spoon turkey mixture onto lettuce leaf (about 1/2 cup on large leaf), add a few mint sprigs , fold in sides and roll up. Can sprinkle with red pepper flakes for spicy kick or drizzle with a bit more soy sauce to taste. Messy but good! Most kids will eat them!
