Vegetarian Chickpea Curry in Slowcooker

Ingredients

1 tbsp organic canola oil 1 onion, diced 2 cloves garlic 1 1/2 inches ginger, peeled and grated 2 tsp cumin 2 tsp coriander 2 tsp turmeric 1 tsp salt 2x 400g canned chickpeas, rinsed 2 cups water 400 g canned tomatoes 1 tsp garam masala
Fry oil, onions, ginger, and garlic until tender.
Place this and all other ingredients except for garam masala into slowcooker. Add more water to bring the liquid just to the top of the beans. Add more water during cooking if needed.
Cook on low for 6 hours. Before serving, add garam masala.
Serve with rice and steamed vege.
