Palak Tofu

Ingredients
1 tbsp. oil1 large onion, chopped2 tbsp. chopped ginger2 tbsp. chopped garlic1 large green bell pepper1-2 jalapenos, seeded and chopped1 tsp. ground turmeric1 tsp. paprika1 tsp. ground cumin1 tsp. salt (season to taste)1 lb. frozen chopped spinach1/2 cup water2 tsp. garam masala (season to taste)12 oz. extra-firm tofu, cubed
Directions
Heat oil over medium-high heat in a medium pot. Saute the onion until browned. Add the ginger, garlic, bell pepper, and jalapenos, and cook for about 1 minute more. Add the turmeric, paprika, cumin, and salt, and stir for about 1 minute. Add the spinach and water, cover, and let cook for about 10 minutes, or until the peppers are soft and the spinach cooked. Add the garam masala, stir for a minute, then remove from heat. Puree the sauce in a blender when cool enough to handle, and return to the pan. Season to taste, and add the tofu. Let the tofu simmer for a few minutes in the sauce to warm up.

Serving Size: Makes 4 servings. Serve over rice.
