One Dish Mexican dinner

Ingredients
One-dish Mexican Dinner1 tablespoon oil1.5 pounds skinless, boneless chicken breasts-cubed1 medium onion5 cloves of garlic1 bell pepper (any color you have on hand)1 tablespoon cumin1 tablespoon Mexican seasoning1 pinch cayenne pepper1 15.5 ounce can of black beans rinsed and drained1 15.5 ounce can of corn, drained½ bunch of cilantro2 cups cooked riceShredded Cheese (Optional)Sour cream (optional)Place the oil in a large skillet and heat. Add the cubed chicken and brown. Add the onions and garlic. Cook for one more minute. Add all of the seasonings, black beans, corn, and rice. Cook until it is warmed throughout. Then add the cilantro. Cook for one more minute. When serving the One-Dish Mexican Dinner, place the serving on a plate and sprinkle your choice of shredded cheese and place a dalop of sour cream on top.
